I’ve never made popovers, but I have eaten them in midtown Memphis at Paulette’s years ago.

I’ve made popovers! And, considering all the posts I’ve read to
night, my first attempt was not too bad. They rose VERY tall, they were crunchy brown on the outside and hollow on the inside. But, the top blew off of all but two of the popovers. This didn’t affect the taste, just the appearance.
It is quite entertaining to watch the popovers bake. They literally rise right before your eyes.
